Easy Blackberry Cobbler
Instead of stressing over a complicated pie, try this simple blackberry cobbler. With just fresh blackberries and 5 additional ingredients, it’s an easy and delicious summer dessert. Top it with whipped cream and a mint garnish to make it extra special. If you're not serving it right away, keep the topping and filling separate to avoid sogginess. This dessert is perfect for your next summer cookout!
Ingredients:
- 4 cups fresh blackberries
- 1 tablespoon lemon juice
- 1 large egg
- 1 cup sugar
- 1 cup all-purpose flour
- 6 tablespoons melted butter
- Whipped cream (optional)
- Fresh mint sprig (optional)
Instructions:
- Preheat Oven: Set your oven to 375°F.
- Prepare Berries: Place the blackberries in a lightly greased 8-inch square baking dish and sprinkle with lemon juice.
- Make Topping: In a medium bowl, mix the egg, sugar, and flour until it looks like coarse crumbs. Sprinkle this mixture over the blackberries. Drizzle the melted butter on top.
- Bake: Bake at 375°F for 35 minutes, or until the top is lightly browned and the filling is bubbly.
- Cool & Serve: Let the cobbler cool for 10 minutes. Serve warm with whipped cream and garnish with a mint sprig if desired.
For Individual Servings: Bake the cobbler in 6 (8-oz.) ramekins on an aluminum foil-lined baking sheet for the same amount of time.
